Poke bowl packs a protein & fibre punch for a packed lunch

Lately, our poke (pronounced “POH-keh”) bowl fever is at an all-time high. This Hawaiian fave has been around for centuries, but it’s becoming all the rage in the mainlands, and for very good reason: It’s nourishing and downright delectable. It’s also a quick and easy meal to prep, so go ahead and add it to your list of make-ahead lunches, because these 11 poke bowls are going to take your lunch break to the next level.

EASY STEAMED RICE: Bring 2 cups of water to the boil, salted to taste. When boiling add in 1 cup of rice. Stir slowly for 10 seconds until it’s bubbling so it doesn’t stick. Lower heat, cover with a lid, leave it for 20 – 25 mins. Turn heat off and let it steam for another 10 mins. Tip: don’t stir it otherwise it breaks up the outer layer and goes gluggly.
